Without a Privacy Policy, you cannot be sure what else that site may do with your information. It may sell your email address to other companies who then bombard you with advertisements.
As mentioned, the reality is that absolute privacy cannot be guaranteed. If you're concerned about your privacy, you should look for and understand the privacy policy of the sites you visit. The purpose or intended use of any information that is gathered by the site should be fully disclosed.
If you're asked to provide personal information of any kind to a website that does not have a Privacy Policy clearly displayed, then don't.
